After months of development and refinement the ‘Inspired by’ Chocolate Pavé, a collaborative creation between celebrated chef James Tanner and pioneering bakery operator ARYZTA Food Solutions, is now available for distribution nationwide. To celebrate its launch, the dessert will feature on both Tanner’s Christmas Party Menu at his gastro pub, The Kentish Hare and The Barbican Kitchen, Plymouth.
Perfect for restaurants, hotels, pubs and B&I catering, where consistency and quality are key requirements, the ‘Inspired by’ Chocolate Pavé is a rich chocolate brownie base, topped with a milk chocolate praline feuilletine and decadent Ecuadorian chocolate truffle, decorated with chocolate mirror glaze and cacao nibs.
James, in his capacity as Chef Ambassador for ARYZTA Food Solutions, worked closely with the company’s brigade of development chefs to take the patisserie product from concept to creation. Available as a frozen finished item, the dessert, says James, really comes into its own when ‘pimped and paired’ with other flavours such as gingerbread, berries, coffee, whisky or nuts. Previously, for example, James has served it to his customers with caramalised banana and a nut brittle.
James said of the dessert: “I’m really looking forward to having the Chocolate Pavé on my Christmas Menu this year. Although it works perfectly well as a dessert on its own, I will definitely be experimenting with different flavours to see what works best for a festive finish.”
