The shortlist, organised by The Caterer, recognises excellence and innovation in food, drink, and equipment products within the hospitality sector.

Judging, which took place at Westminster Kingsway College and at The Caterer’s offices in London, saw food and drink products rigorously tested and tasted by industry chefs and consultants, alongside three senior lecturers at the college.

Ruskim Seafoods is a leading supplier of seafood products to the UK and Irish Wholesale and Asian Foods sector.

Sykes Seafood is a UK based, privately owned company, focused on providing customers with sustainably sourced quality seafood.

Ruskim, together with Sykes Seafood and Klaas Puul creates a $500m pan European shrimp focussed seafood business that will offer a market leading offering of seafood products across the Retail, Wholesale, Industry and Foodservice sectors. The combined businesses will operate 5 manufacturing sites across the UK, Europe, and Morocco as well as 10 distribution centres across UK and Europe employing over 3900 colleagues.

The three businesses already share many synergies and similarities, and the combination will provide a solid backdrop for future growth and allow greater efficiencies in sourcing and an enhanced delivery platform to customers old and new.

Ruskim will have access to Sykes and Klaas Puul’s highly automated production facilities and both Sykes and Klaas Puul will benefit from access to the extensive depot and transport network at Ruskim.

MEAT THE ULTIMATE CHRISTMAS CENTREPIECES: ICELAND RELEASES A RANGE OF LUXURY MEATS AHEAD OF CHRISTMAS

Turkey on Christmas Day isn’t the only centrepiece that’s needed this year, and although it’s a favourite for many, Iceland has revealed other showstopping meats to win over customers this Christmas. This luxurious lamb shoulder joint is beautifully seasoned with sea salt and black pepper, and absorbed in garlic and thyme butter – what’s not to love?

BIRDS EYE INTRODUCES ITS FIRST-EVER ‘MINI CAPTAIN’ AS 7-YEAR-OLD FOODIE TAKES THE HELM

For the first time in the history of Birds Eye, a child will be featured as the Captain on a pack of the nation’s favourite Fish Fingers.

A well-deserved prize for seven-year-old budding chef, Tadhg, from Manchester, who entered Birds Eye’s nationwide competition looking for children aged 6 to 12 to submit their very own Birds Eye Fish Finger recipe, along with the inspiration behind their creation.

He will feature on limited edition packs of Birds Eye Fish Fingers in Iceland stores from February 2022.

Standing out from all the other competition entrants, Tadhg’s recipe, Fish Finger Tacos, shows just how versatile Fish Fingers can be. He used an array of exciting flavours and spices, putting a Mexican twist on the more traditional British food staple. Incredibly tasty and super simple to make, all you need to do – as per Tadhg’s recipe instructions – is cook the Fish Fingers using the on-pack instructions, warm your corn tacos in the oven, and serve with your favourite toppings! They’re great with a touch of paprika, and served with salsa, sour cream, iceberg lettuce and cheese; or, for a more sophisticated palate, you can try adding ingredients like coriander, avocado, and chilli for some heat.

Tadhg, who lives in Manchester, said: “I’m so excited to be Birds Eye’s new Mini Captain – I can’t wait to go in store and see my face on packs of Fish Fingers! They are my favourite on our ‘Taco Tuesday’ family nights. We change up the flavours and ingredients each week, although I love cheese as much as Fish Fingers so will always add that too! I really hope other people try my recipe and see how yummy it is.”

Partnering on this activity, Birds Eye and Iceland Stores, two of the nation’s most-loved frozen food brands, launched the competition together to inspire and encourage children to get creative with a mealtime staple. The aim is to inspire families across the nation to get their little ones involved in mealtimes, while showing them how fun and easy it can be to get more fish (and its nutritious benefits) into our children’s diets.

BRAKES LAUNCHES WINTER FOOD FESTIVAL WITH FOCUS ON SUPPORT, INSIGHTS, AWARD-WINNING NEW FOOD AND VEGANUARY

Brakes Virtual Winter Food Festival, which is live until 14th January 2022, will offer operators across foodservice a multitude of practical ideas and insights as they look to navigate the challenges of the festive season, make the most of Veganuary opportunities and start to plan for the new year.

At the heart of the Winter Food Festival will be a series of webinars covering topics such as Veganuary, mental health and staff wellbeing, and upcoming calorie labelling on menus legislation changes. The webinars have been created in conjunction with leading foodservice organisations including Veganuary, #FairKitchens, Unilever and Nutritics.

‘At Brakes we’re passionate about the food we sell, and about being the chef’s hidden partner, providing them with the products that make running their kitchen that little bit easier, but that is only a part of what we do to support our customers,’ says Leon French, Brakes’ Customer Marketing Director. ‘The Winter Food Festival brings together helpful guidance, support, and insights, as well as award-winning new food, to help operators plan for the key occasions over the coming weeks and months.’

Among the webinars will be a session on the #FairKitchens movement which is striving to make the industry a fairer, more inclusive, and happier place to work, an insight into how caterers can make Veganuary a lasting opportunity, and an essential guide and practical solutions for the new calorie labelling legislation that comes into effect in April 2022 from Nutritics.

And, of course, great food will also be on the menu! These products will be complemented by insights into the latest food trends, downloadable resources, and on-demand video inspiration.

As part of a vibrant new look the event website has some fantastic new features that will enable visitors to get to the information that they want both quicker and more easily. BLANKET HOUSING ORDER NOW IN FORCE TO COMBAT AVIAN INFLUENZA

New housing measures to protect poultry and captive birds from avian influenza across England, Scotland, Wales, and Northern Ireland came into force from 00:01 on Monday 29th November.

This means it is now a legal requirement for all bird keepers to keep their birds indoors and to follow strict biosecurity measures in order to limit the spread and to eradicate the disease.

BFFF will be keeping a close watch on the situation and will keep members updated. If the housing order continues for several weeks this could also impact on the Free Range market, as we saw in the winter of 2017. Legally, product labelled as Free Range must be Free Range. If housed beyond a 16 week period, then in accordance with Regulation (EC) 589/2008 they would then be classed as barn eggs and meat.
