THE FROZEN RANGE THAT’S ALREADY SORTED YOUR FESTIVE MENU

With 100 days until Christmas trading begins in earnest, wholesalers and the operators they supply are already finalising the menus that will carry them through the busiest stretch of the year. For kitchens facing weeks of back-to-back party bookings followed by a full Christmas Day service, the products going onto a festive menu need to be proven well before December, not still being tested once the bookings start landing.

Pacific West’s festive development work for this season has already been through months of tasting and styling, and the resulting range is now out with wholesalers and operators building their December offer. The company’s view is that a frozen format only earns its place on a festive menu if it can match a made-to-order dish on flavour while removing the prep burden that peak trading periods can’t absorb.

 

Built for the Sharing and Canapé Slot

The party season range leans on formats that suit high-volume, drinks-led bookings. Salt & Pepper Squid Chunks  arrive par-fried and ready to finish in a conventional oven or deep fryer, a specification built around consistent portioning and quality. On the plate, they work well piled into a shallow bowl with a smoked chilli mayo, a scattering of spring onion curls and a lime wedge, giving operators a fast-turnaround bar snack that still looks considered.

The Hand Cut Panko Coated Squid Rings  go straight from freezer to fryer, and the same applies to Noodle Prawns, which can also be air-fried or oven-baked, and Tempura Torpedo Prawns

For serving, the squid rings suit a warm garlic and caper aioli with pickled fennel on the side, the Noodle Prawns work well over shredded Chinese cabbage with a hoisin and sesame drizzle, and the Tempura Torpedo Prawns pair naturally with a yuzu soy dip and a scattering of chilli threads, three distinct flavour directions that are easy to deliver and impressive to eat.

Centre-of-Plate Options That Don’t Add Kitchen Pressure

For Christmas Day and set-menu trading, the emphasis shifts from speed to presentation without adding a second pair of hands to the pass. Sliced Smoked Salmon needs nothing more than defrosting and plating. It sits beautifullu on rye croutons with a horseradish crème fraîche, capers and thinly sliced shallot for a classic opening course, or dressed more simply with a dill oil and cracked pepper for a lighter start to the meal.

The Sea Bass Fillets are skin-on, descaled and individually frozen, so a section of the kitchen can pull exactly the number of fillets a table needs rather than defrosting a whole case, and they’re suited to a la carte and set-menu service alike. Pan-fried and finished with a brown butter and toasted hazelnut dressing over a parsnip and thyme purée, it holds its place as a fillet dish worth featuring beyond the set menu. Salmon Portions follow the same logic, sold skinless and boneless across four portion weights, and take well to a maple and wholegrain mustard glaze served over braised red cabbage, with a cranberry and chilli version giving operators an easy switch for New Year’s Eve.

For wholesalers and operators still finalising a festive range, the practical case for locking this in early includes:
