We mimic cultural food staples for example, from Italian culture we have created an Irish Pancetta (from pork bellies) plus an Irish Porchetta (from narrow loin of back combined with pork belly) - Italian heritage with an Irish twist plus superior quality.

With beef we have created New York Style Pastrami in barbecue/coriander flavour, beef with Horse radish, garlic or herb topside, using eye-of-round, brisket and Angus topside. Also, peppered beef using Silverside and Pimento spiced beef.
