for Farm Frites’ Simply Fries Profit Rise

Farm Frites’ Simply Fries Profit Rise campaign is encouraging chefs to use store cupboard ingredients creatively to prepare delicious dishes while reducing kitchen waste.

With a focus on sustainable eating, many of Farm Frites’ recipes embrace the popular street food trend by loading the British favourite of chips with exciting toppings.

Try these breakfast, lunch or dinner and dessert recipes for a cost efficient, quick menu offering.

Breakfast Fries

**TOP TIP** 

 SPICE IT UP by using chorizo, salami or snipped fresh chili.  


Ingredients
per person

  • 200g of Farm Frites fries – you can you use any cut size – even wedges.
  • 25g torn Parma or Serrano ham or similar.
  • Egg. Cooked to your liking – poached or scrambled will also offer choice. For extra decadence you could use a duck egg.
  • A drizzle of truffle oil.
  • Picked herbs, to garnish.

 

Method

For best results always cook fries to the on-pack guidelines and arrange them evenly on the serving plate. Tear the ham and sprinkle it evenly over the top of the fries. Place the egg on top of the fries and ham. Drizzle a light serving of truffle oil and garnish with the fresh parsley

Drink Pairing 

Nod towards the indulgent with a fizzy flute or Bloody Mary to get the day going!

 

 

Indonesian Satay Fries

 

Ingredients

Per person

  • 200gr. Farm Frites fries
  • 3 tbsp. satay sauce
  • Indonesian spicy fried coconut flakes such as Soerendeng
  • Atjar, Indonesian vegetable pickle (From jar)
  • Coriander

 

 

**TOP TIP** 

Finest Steakhouse 10/20mm fries go really well with sauced dishes. Serve this as a side order upgrade or a simple bar snack.

Method:

  1. Heat the satay sauce.
  2. Prepare the fries according to the package instructions.
  3. Divide the fries on two plates and add the sauce.
  4. Decorate with coconut flakes, pickles and coriander.

 

 

Moules Frites – British style!

Ingredients

Per person

  • 200gr. Farm Frites Round Cut
  • 75g Freshly cooked fish – use Prawns, Clams, Mussels, Octopus
  • Cocktail Sauce
  • Lemon Wedges to serve

Method:

  1. Prepare the fries according to the package instructions.
  2. Divide the fries on two plates
  3. Arrange the fish over the hot fries
  4. Decorate with Cocktail sauce and lemon wedges

BigFish launches it’s ‘Best Ever’ smoked fish with new ‘Signature’ range, made in Great Grimsby

New this autumn to JCS Fish’s award-winning BigFish range are three new ‘Signature’ smoked fish products, the result of over 100 years combined family expertise in salmon and fish smoking.

BigFish Signature is a premium range comprising Oak Smoked Salmon, Oak Smoked Organic Salmon, and Oak Smoked Sea Trout, prepared using whole sides of fish which are cured by hand with natural salt.  They are slowly smoked in a traditional kiln for an extended time with oak and other natural flavourings, creating smoked fish with unique character and a particularly full, rich taste.

The range uses superior fish, including certified Organic salmon and a standard salmon with designated origin (PGI) status from Scotland that is certified to the GLOBALG.A.P. (GGN) aquaculture standard, meeting strict criteria on environmental integrity, animal welfare, food safety and social responsibility.  BigFish is the only brand in the UK to currently apply this standard.

Says JCS Fish co-founder and MD, Andrew Coulbeck: “Smoked fish has long been part of our family heritage, but we only recently decided to bring it in-house again to give us the control and flexibility we were looking for.  Signature is the result of our desire to create the most perfectly smoked products we could in our own Grimsby smokehouse.”

The new smokehouse is part of a wider programme of investment at JCS Fish.  It has been built and certified to modern high-care production and hygiene standards but with traditional style kilns.  It also allows the company to ensure certified Organic status for products made with Organic fish.

Big Fish™ – first UK brand to commit to GGN responsible aquaculture standard

Big Fish™ is first UK brand to commit to GGN responsible aquaculture standard, launched with new product for Mindful Chef

JCS Fish, the family-owned salmon specialist, has signaled an upweighted commitment to responsibly sourced salmon by becoming the first company in the UK to commit to the GGN aquaculture label for its BigFish range.  The first product to carry GGN labelling is a BigFish fresh salmon fillet which will start to appear in recipe boxes distributed by Mindful Chef from this month.

The GGN label stands for certified and responsible aquaculture and provides guidance to consumers. It indicates that production processes comply with the strict requirements of the international GLOBALG.A.P. aquaculture standard: food safety, environmental integrity, animal welfare and social responsibility. In future, BigFish branded Atlantic salmon[i] products will carry a label with a GLOBALG.A.P. (GGN) number allowing consumers to verify the certified source of the product online.

Jack Coulbeck, commercial manager at JCS Fish says, “Whilst consumers are increasingly interested in the provenance of their food, there is much confusion about what constitutes a responsible choice, particularly when it comes to farmed fish.  We want to make it simple by ensuring BigFish products have a third-party certification which guarantees they’ve been farmed responsibly.   The GGN label is an important tool for us to deliver on this objective for our salmon.”

Caterforce reveals record ticket sales for upcoming 2019 conference

The buying group has also announced the final line up for its biggest ever conference 

Caterforce has announced the final line up for its highly anticipated 2019 supplier conference and revealed that record ticket sales have resulted in a limited number of additional passes being made available after the event sold out.

Following the success of previous years, more than 280 suppliers and delegates are now expected to attend at Celtic Manor Resort to gain insight from Caterforces’ seven wholesale members as well as a number of special guests.

The conference, named ‘The Market Uncovered’ for 2019, will see the world-famous resort transformed into the ultimate market experience.

This year delegates will hear from a range of speakers on topics including key food trends, insight into the future of foodservice and Caterforce’s plans for 2020 and beyond.

British explorer Sir Ranulph Fiennes was confirmed as the event’s keynote speaker in February as well as British Economist, Journalist and Broadcaster Liam Halligan, as speaker.

Now the Group has also confirmed that UK foodservice expert, Simon Stenning, will join the final speaker line-up whilst former Wales and British & Irish Lions rugby player, Scott Quinnell, will be the event’s evening entertainment.

Gary Mullineux, Interim Managing Director of Caterforce, said: “The Market Uncovered will be the largest Caterforce conference to date. We’ve invested a lot this year to offer our guests a sought-after line up that isn’t to be missed.
