Oakland Appoints Distress Load Technical Lead Team Manager

Family business, multi temperature supply chain and logistics specialist, Oakland International, has appointed Eimear Scolard as the company’s new Technical Team Lead.

Tasked with heading their successful Distress Load Team, Eimear will oversee inspections, co-ordinating the team from initial contact through to load completion. With full HACCP training and a quality assurance background, trained in traceability and all aspects of food safety having previously worked at Oakland, Eimear’s prior fast-paced retail experience as an assistant manager and team leader meant she was ideally placed to re-join the company’s rapidly expanding Distress Loads Team.

Eimear commented: “It feels great to be back, with the attraction being the ability to grow a department in a role I really enjoy. We are already taking on new jobs, so it’s a very exciting time for us, and with the unpredictable nature of distress load work, we never know what’s coming in, so we need to respond immediately to incidents and contaminated loads of any nature.”

Oakland International’s pioneering Distress Load Management service is an innovative solution whereby food losses for customers, loss adjusters and hauliers on distressed loads are reduced significantly whilst offering additional environmental customer benefits. A distressed load is defined by the integrity of food safety being potentially compromised such as when pallets move in transit, incorrect temperature or clandestine infiltration. Oakland is developing an inspector training program which specialises in all aspects of food safety and clandestine infiltration.

Overseeing all inspections, as lead manager Eimear will be customer focused. Originally from Ireland, Eimear moved to the UK 2 years ago.

Added Eimear: “I have a great deal of pride in my work which reflects itself in many ways from how we work as a team to the standards of product going out the door, with my key skill being accuracy, crucial given the work we do. If you have a load issue and you’re wondering ‘is that something Oakland can deal with?’ the answer is most likely yes! It’s always worth picking up the phone and giving us a call!

“Working with distress loads can be challenging but it can also be very satisfying and rewarding when a customer needs help and within 24-hours we have sorted their issue and saved stock and have them back on the road and ready once again for delivery. I’m loving living in England and I have a wonderful career, so it’s likely I’ll never leave!”

Country Range Student Chef Challenge Semi-Finalists Revealed

With the deadline for entries now passed, sixteen catering colleges from around the UK have received an early Christmas present after they were announced as semi-finalists for the prestigious Country Range Student Chef Challenge 2018/19.

The successful teams to qualify for the semi-final heats following a tough paper judging stage are as follows:

The next stage for the students will be the semi-final heats which will take place between the 28th January and 8th February where they will be required to reproduce their menus under competition conditions and in the presence of the Craft Guild of Chefs’ Chairman of Judges Chris Basten. The exact dates and venues of the semi-final heats will be confirmed in the new year.

Run in collaboration with the Craft Guild of Chefs, the competition is celebrating its 25th anniversary and this year the theme focuses on the core skills and techniques students learn on a second-year professional cookery course. The challenge requires teams of three students to plan, prepare and execute a three-course, four-cover menu in just 90 minutes and must include an Asian-themed seabass starter, a main duck dish and a dessert containing at least 30% of Country Range Chocolate Drops.

Chris Basten, the Craft Guild of Chefs’ Chairman of Judges, said:

“The standard of entries this year once again didn’t fail to disappoint and it’s a shame we can’t send them all through to the semi-finals as I’d love to try some of the dishes which didn’t make it. That said, the successful students who did make it thoroughly deserve their places and have shown real creativity and skill in their menus. I can’t wait to see how they prepare the dishes and more importantly how they taste.”

“A huge thank you to all the colleges who took the time to enter this year’s Challenge and commiserations to those who missed out. Hopefully the feedback received from the Craft Guild of Chefs judges will spur them on to return better than ever next year. The standard of entries has again exceeded our expectations and bodes well for an exciting semi-final stage so congratulations to the sixteen successful teams. However, it’s one thing planning a menu and another thing cooking it so I’m excited to see how the students cope under competition conditions come January.”

Country Range Student Chef Challenge

The long-running Country Range Student Chef Challenge provides full-time hospitality and catering college students with the perfect platform to improve cooking skills, knowledge and technique, while developing real life experience under intense pressure and competition situations.

Run in partnership with the Craft Guild of Chefs, who provide competition-standard judging and detailed feedback to the students, the 2018 Challenge was won by a team of students from the City of Glasgow College.

The Challenge, Criteria and Prize 

Teams of three students are required to plan, prepare and execute a three-course, four-cover menu in 90 minutes. The Challenge criteria is focusing on the essential core skills and techniques studied on a second-year professional cookery course and will test student’s knowledge of both classical cooking and the more modern methods of the last 25 years.

The victorious teams from the semi-final heats will compete at the grand final, which will take place on the 13th March 2019 in the Live Theatre of ScotHot – Scotland’s largest hospitality and tourism show.

The cost per cover is £8 and the menus must include:

An Asian themed seabass starter – this must be made using a whole seabass, which must be filleted and presented to judges with bones and trim displayed.

A main duck dish cooked any way – demonstrating butchery skills students must remove both legs by tunnel boning before removing the breasts and presenting the whole carcass to the judges. Portion size for the dish is to be half a breast per person and some of the leg meat.

A classically creative dessert with a modern twist that contains at least 30% of Country Range Chocolate Drops

The prize for the winning team for this special anniversary year is a day work experience placement at a Michelin-starred restaurant, as well as being taken on foodie tour of London which includes a guided tour of the capital’s famous Billingsgate Market where they will be taught fish filleting skills by the resident master fishmonger.

New face in the European top management: UniCarriers Europe AB, a subsidiary of Mitsubishi Logisnext, appoints the Swede Jonas Tornerefelt as Executive Vice President (EVP) Sales & Marketing. He succeeds Bengt Kristiansson in this position, who is retiring. Jonas Tornerefelt will fully take over the operational business after a handover phase on 1 January 2019. Bengt Kristiansson will remain with the company as strategic advisor to UniCarriers President Masashi Takamatsu.

All of them are affected by the effects that increasing automation and the Internet of Things are having on logistics. Jonas Tornerefelt (52) has extensive experience in Sales, Marketing, Product Management as well as Business Development and Transformation of B2B and B2C companies. He spent 19 years in various positions at Toyota Material Handling Europe, including the role of Managing Director of Toyota Material Handling Greece. Before joining UniCarriers, Jonas Tornerefelt was Manager Customer & Consumer Services Nordic at the Swedish household appliance manufacturer Electrolux.

Having reached its 18th year in 2018, salmon specialist JCS Fish will celebrate the year as one of its most successful ever, having grown sales volume by 43% and its customer base by 24%.

The Grimsby-based family company also launched a new range of fish cakes under its own BigFish™ brand; secured three new listings for BigFish products in Ocado; won five Food Management Today Awards and a Great Taste Star for its BigFish Smoked Salmon.

Founding director, Louise Coulbeck, says, “I think we can look back on 2018 with a degree of pride.  Having weathered the salmon pricing storm of 2016, last year we set ourselves new goals, many of which have come to fruition during 2018.  We cemented customer relationships; achieved wider distribution for BigFish and set out new environmental objectives, such as with our new Packaging and Recycling policy.”

This December, JCS Fish once again achieved Silver in the Investors in the Environment (IiE) environmental certification programme and re-certified its GlobalG.A.P Chain of Custody status for sustainably produced salmon.

Louise says, “Of course, just as for everyone else, 2018 was a year with its challenges as well as achievements, but despite the continuing wider economic uncertainty and ongoing discussions about Brexit, for us it was a pretty good year and we’re all looking forward to the next one!”

International bakery group, Lantmännen Unibake, has signed an agreement to acquire Australian pastry manufacturer, Bakery Du Jour. The acquisition is a key step to expand Lantmännen Unibake’s global footprint.

Family-owned Bakery Du Jour was founded more than 20 years ago and is a leading supplier of premium pastry products to major Australian retailers as well as food service customers. Bakery Du Jour employs around 90 people and is located in Melbourne, Australia.

Since 2006, Lantmännen Unibake has been successfully exporting pastry products to the Australian market. The acquisition of Bakery Du Jour now supports Lantmännen Unibake’s growth with locally produced products:
