Chefs at Play Winner to See Creation Go Into Production
Wendy Lo & James Tanner
Talented young chef Wendy Lo, champion of Coup de pates’ ‘Chefs at Play’ competition, will see her creation rolling off the production line when the high-end frozen bakery supplier launches her winning creation ‘Taste of Spring’ into the foodservice market early next year.
Wendy, 23, a student chef at City of Glasgow College and aspiring protégée of ‘Masterchef: The Professionals’ winner Gary MacLean, impressed judges back in May with her stunning ‘on-the-go’, patisserie product – a sweet Coup de pates tartelette case, filled with honey blossom mousse, topped with elderflower and strawberry jelly and lemon curd, garnished with fresh strawberries, blueberries and pistachio nuts.
Wendy’s success saw her creation featured on-stand at Taste of London back in June, alongside the company’s brigade of development chefs and James Tanner. Now, so impressed with the quality of her creation and the positive feedback it received, the team at Coup de pates has decided that ‘Taste of Spring’ deserves its own place in the company’s catalogue and is currently recreating it in its Paris development kitchen.
Paul Whitely, Head of Marketing, Aryzta Food Solutions, says: “Wendy’s ‘Taste of Spring’ creation was simply fantastic. Her understanding of the brief and combination of flavours helped to create a product that was not only delicious, but also commercially viable for us to produce on a much larger scale. It is a credit to Wendy and all her hard work that we have reached this decision. I look forward to seeing what the future holds for this extremely talented young chef.”
On hearing the news, Wendy Lo, added: “I’m so excited to see my creation, a recipe I exhausted time and again to make it the very best I could, come to life in this way. To have your very own product in the catalogue of one of the biggest suppliers in the foodservice market is beyond words. It’s an achievement I’m hugely proud of and I can’t wait to see the result next spring.”
A principal supplier in France for a quarter of a century, Coup de pates launched in the UK at the beginning of 2014 with a proposition of super high-end frozen bakery and handmade semi-prepared products, created for professionals.
The Coup de pates brand is the high-end foodservice arm of bakery group, ARYZTA Food Solutions, a UK food solution specialist – parent to a family of brands to meet the needs of modern hospitality. Sub-brands include: Coup de pates; everyday favourites from La Carte; gourmet Swiss baker, Hiestand; beverage solutions from Pro Juice and fine artisan garnishes from Bouquet Garni.
